Easy to Peel Hard Boiled Eggs

I cook, peel, and eat a lot of Hard Boiled Eggs.

I will normally eat at least one hard-boiled egg every day, but I cook a full carton of 18 eggs at a time. So when two or three eggs out of eighteen don't peel easy, it's not the cooking method.


My Easy-to-Peel method for cooking eggs starts with a full carton of eggs. Place each egg in a big pot of cold water.

Fill the pot until every egg is covered.

Keep the lid off, till the pot comes to a full boil.

When the pot comes to a full boil, turn the flame/burner off, and put the cover on.

Set the timer for 20 minutes.

When the 20-minute timer goes off, Take off the cover, and set the timer for another 10 minutes.

When the 10-minute timer goes off, I put the pot in the sink and turn on the cold water.

When the pot overflows, I keep dumping the extra water till the eggs are cool enough to take out with your fingers.

I then cover the eggs with cold water and put the whole pot in the refrigerator overnight.

Feel free to start peeling and eating now if you're hungry.


When I let the eggs soak overnight, they feel wet when I peel them. The longer they sit, uncovered, in the refrigerator, the dryer they will get. Modern refrigerators are dehumidifiers.

When an egg is hard to peel, it's because you're peeling the wrong side of the shell from the membrane, this is not your fault, the problem is the egg is too dry. When this happens, slow down, and gently try to rub the membrane that's stuck to the egg white. This particular egg is most likely going to continue to give you trouble. But if you take your time and try to make sure you're getting the membrane off it will go easier.

If like me you eat a few eggs every day, you can peel a couple extra and put them in a plastic sealed container.

I purposely don't peel all my eggs, because I feel the eggshell protects them until I'm ready to eat them.

You can probably let your unpeeled eggs soak in clean water for the same length of time that you keep other precooked perishable foods that you're planning to eat.
